Turkey Bacon Cheddar on Ciabatta with Fries

  • 1 package of jennie-o turkey baking tenderloins (two small breasts)
  • 1 pack or 1 bunch of fresh spinach
  • 1 lb. bacon
  • Dukes Mayonaise
  • 8 oz. mild cheddar cheese
  • Food Lion Ciabatta Bread from Bakery
  • 1 can diced tomatoes (drained)
  • Alexa Baking Fries w/ Sea Salt (half sheet baking time 15 minutes)
  1. Pre-heat oven to 450 (set to convection).
  2. Wrap turkey breasts in foil, press flat by hand, place on baking sheet and bake for 30 minutes.
  3. Heat large skillet over medium high heat until hot and then turn to medium low.
  4. Place Alexa baking fries on elevated baking grate and let sit until called for later.
  5. Pan fry 1 lb of bacon (this will likely take the entire baking time).
  6. As pieces finish, pull them out and drain on paper towels.
  7. After 30 minute timer goes off, check temperature of turkey.  It should be around 120 by this point.
  8. Place sheet tray for fries in oven with turkey, and bake an additional 12 minutes.
  9. Toss in whole ciabatta loaves and bake for 6 of the 12 remaining minutes on the timer.
  10. Pull out ciabatta and let rest until cool enough to touch.
  11. Remove fries and turkey after 12 minutes.
  12. Let turkey rest for 4-5 minutes before slicing.
  13. While turkey is resting, slice ciabatta in half to make into sandwiches.
  14. Sprinkle cheddar cheese on ciabatta top halves and place in oven face up for 3-4 minutes to melt cheese.
  15. Smear mayonaise on bottom half of ciabatta.
  16. Place one layer of turkey on mayonaise.
  17. Place one layer of bacon on turkey.
  18. Place one layer of spinach on bacon.
  19. Sprinkle with diced or sliced tomatoes.
  20. Top with cheddar covered top of ciabatta.
  21. Serve with fries and vegetable of choice.
